for guys that game still freezes on loading screens.
this can be fixed by loading game in patched mode. this is the same mode that has been used for other problem games like F1 etc.
you need herms v4b payload on your dongle, v4b is latest hermes version.
alternate payload to hermes is PL3, but afaik. PL3 payload doesnt allow patched mode.
i had this issue too and all is fixed now after switched to patched mode.
my setup:
* payload: hermes v4b
* backup manager: multiMAN ver 1.12.00 (

* playing from internal HDD
* no need to have orig bluray disc in drive, just using discless mode
* GT5 in-game options, turn automatic HDD install off. there is simply no need for game to install itself on hdd since we got everything copied it different directory already. you can also use in-game option to delete any already preinstalled data.
to test, for example, game will freeze on loading if starting arcade mode time trial, but whats strange, arcade single race with some opponents will work, so try that to test if you got all setup correctly.
to be clear, game works 100%, no freeze on loading screens
in multiman, switch to patched mode by pressing R1, game list should refresh itself.
note that now, multiman in patched mode, will only show games that are in /dev_hdd9/games folder (note not game folder but games)
if you have game in different folder and want to move it to that one, there is no need to reupload that 14GB again from pc.
you can use ftp commandline tool from windows, connect to ps3 via FTP and use rename command on game folder like that:

once you got your backup manager set up,
delete all preinstalled GT5 game data using XMB. note, not game saves but stuff that GT5 copys to internall hdd to run faster from bluray
